Kim, I've asked the same question.  So many things that taste good aren't good for you, and so many things that are good for you, don't taste good.  I lost my thyroid to Hashimotos and have dealt with autoimmune/inflammation issues for 30+ years.  I've been talking about the Plant Paradox diet lately, as it addresses underlying reasons for autoimmune/inflammatory processes.  It's not an easy diet (for me, at least), but it's worth it if I can shake the fibromyalgia/CFIDS/diabetes.  I have noticed small amounts of pigmentation are beginning to return in my left arm, which is encouraging, brain fog is improving, and the stiffness in my hands lessening.  So, I'm going to keep at it.

Since I have Hashimotos I am supposed to avoid peanuts.  I do though eat peanut butter sometimes as I like it.  And sometimes peanuts.  Why is it tasty peanuts have to be not the best for you..

Peanuts contain the highest lectin levels of any plant.  Lectins dock where sugar and protein are supposed to dock, not allowing insulin in to do its job.  Hence, insulin resistance aka Diabetes Type 2.  This is according to  Peanuts are also a ground nut and are prone to aflatoxins.  Further, they provide phytoestrogens:

Where you find soybean oil there is usually the food for cancer HFC high fructose corn syrup and the more than likely other cause of diabetes, poly unsaturated vegetable oils are the cause of plaque on your arteries, who would of thought the doctors were so wrong. I wonder how safe soy sauce is since most soy is genetically modified.

Thanks for all the nutrition info you post, this one just confirms my suspicions about soybean oil, and soybeans in general.

Avoid soybean oil like the plague.  It's in everything.  No wonder there's an explosion of diabetes.....
