You might want to consider the alternatives for your winter garden so you don't have to plant so many different kinds. I use spaghetti squash as an alternative to spaghetti and also fried with onions and garlic as a hashbrown substitute, both quite tasty, so that's another one to consider for your garden. You never know if you (or someone in your family) might go diabetic.
Cauliflower is also a good substitute for mashed potatoes, when blended with milk, butter, salt, pepper, garlic, and bacon bits. It has the look and texture of mashed potatoes, and the bacon bits does the trick in masking the cauliflower taste.
