Well all I know is the (gmo) wheat gluten makes symptoms worse for auto immune sufferers, especially hastimoto's thyroid. Supposedly, from what I have read the molecules in wheat gluten sort of resemble thyroid molecules so those who have Hashimoto's and eat wheat gluten, it causes the symptoms to worsen as it flares up the auto immune attacks. I noticed I do not have the joint inflammation now that I had when I was eating gmo wheat gluten products.
I have wheat berries. They store the longest.
When I first heard about the dangers of wheat I was looking for food storage items and was warned to stay away from the Mormon food storage site because their products were mostly wheat based. Here s another article to look at.
I’d heard from other naturopaths that commercially processed wheat may be unhealthy. I found an article from the Weston Price Foundation, an organization that is not influenced by the food industry, that describes the issue.
According to the article, wheat is exposed to hormones, fertilizer, and pesticides. In addition, commercial processing generates high heat which destroys much of the nutritional value of wheat. There is some speculation that the high consumption of commercial wheat is why the rates of celiac sprue and wheat allergies are increasing.
They suggest trying to use organic, stone-ground wheat instead. The stone-ground process generates less heat so the wheat loses less nutrition. Another option is to buy wheat berries and make the flour yourself.

It could be, Peter. Western diets are highly acidic, in general.
I wonder if the acidic effect on the body of wheat also plays a part to stir up your autoimmune issues Cheryl and Kim.
Although wheat is generally considered only "mildly acidic" it may have a more pronounced reaction in some people.
I believe a more alkaline based diet will assist with any adverse diet reactions. Maybe worth a try.
I used the South Beach Diet ten years ago. On the first phase, I felt so much better, had lots of energy and all, and lost weight easily. Recently, the doctor who created the diet said he had recently figured out that Phase 1 of his diet is gluten free and wondered if that is the reason so many people said they felt so much better on it. He didn't plan it that way, but it just happened. I happen to be a wheat-a-holic, love bread, and like Kim, I have autoimmune issues.
From what I have read about GMO wheat, it has not contaminated that much of the regular wheat crop. We have completely removed wheat from our diet because it does not seem to have any real value and may even be bad for you.
Some day whenever I get my hands on some, I want to try the organic heirloom Heritage wheat flour (not the gmo or hybrid crap) that existed 50-60 years ago. I can make my own bread with it, plus it is healthier for my family than the gmo garbage. I do want to see if I can tolerate that with my auto immune condition as this would prove if it's just the GMO crap. I won't know till I try it.
My autistic grandson gets angry when he eats any bread products. His parents assumed it was gluten, like you said maybe something else.
Personally, I can no longer eat any wheat products. I don't think my specific problem is because of the gluten because I tried gluten free bread and there was no improvement in digestion.
It would be interesting to know exactly what the contaminant is though.
If I stay away from bread products I feel better.
